Squeezy Rainbow Nyonya Layered Cake

  1. Boil pandan leaves, water and Homsweet Pure Crystalline Fructose until the fructose dissolves. Let this syrup cool for later use.
  2. Mix the tapioca starch flour and rice flour into the syrup and add coconut milk.  Stir evenly until you get a smooth batter.
  3. Divide the batter into three equal portions in separate bowls; Add Squeezy Rose Cordial into 1 portion, Squeezy Orange Cordial with Juice Concentrate into another portion and mix well. Another portion remains original.
  4. Brush the 7" mould with a thin layer of oil.  Pour a layer of the 1st portion and steam for 3 minutes, then pour the next layer of different colour and steam for 4 minutes. Continue the steps layer by layer of alternate colour.
  5. Repeat the sequence until you get 9 layers. Steam the last layer for 10 minutes.
  6. Remove the Layered Cake from the mould when it cools down completely. Use an oiled knife or plastic knife to cut to prevent sticking.
